Is my mid/southern Spain itinerary doable?

Is a day trip to the mosque cathedral and back from Granada feasible too? I know the Madrid says are busy but is it feasible if I just want to see museum highlights? I will arrive late on Saturday and leave on Wednesday in the morning, so I have 3 full days. Main reason: I got a ticket for Atlético Madrid vs Barcelona, so I decided to just go for it. I put together a rough plan and wanted to check if it makes sense or if I’m missing something important.
