Help me choose: Amalfi Coast vs Tuscany!

Hi! I'm planning a 10 day trip to Italy in early July with my boyfriend. We're definitely starting in Rome and ending in Sardinia (we love beaches), but can't decide between Amalfi Coast and Tuscany for the middle part of the trip.

Amalfi coast: we'd stay in Sorrento, explore Positano, see Pompeii, and do a Capri boat trip, but I'm worried it might feel repetitive to Sardinia.

Tuscany: I'm concerned there won't be enough things to do besides driving around the countryside and visiting the towns (San Gimignano, Siena, Val d'orcia). We're more into activities than just exploring, and not big city people (we'd only spend ~1 day in Florence). That said, Tuscany just seems so unique and beautiful and like a quintessential Italian experience, so I'm worried about missing out on that.

What should I choose? Any activity suggestions for Tuscany?
